Wash beets thoroughly. Leave 3 inches of stems and the roots attached to beets. Cover with water. Boil until tender Drain Cover with cold water. Slip off skins, stems, and roots. Slice or leave whole. Add vinegar salt, and sugar to taste. Let stand 1 hour. Serve.
